500g chicken thighs, 1/4 cup soy sauce, 2 tbsp mirin, 2 tbsp sugar, 1 tbsp ginger, steamed rice
Mix soy sauce, mirin, sugar and ginger. Marinate chicken for 20 minutes. Pan-fry until golden. Add sauce and simmer until thickened. Serve over steamed rice.
